Peach Cobbler

The response from the article in “The Country Today” has been great! Many orders and lots of nice comments.
I had an idea today about another use for pancake batter. I had some peaches that we had frozen last summer and I wanted to use them up to make way for some meat we have coming, so I made an old fashioned peach cobbler where you put the dough/batter on the bottom. It is really good! So I had a brainstorm! How about this.? Take about 4+ cups of peaches and simmer them in 1/2 cup of sugar and 1/3 cup of water for about ten minutes.
Put a 9 x 13 cake pan or casserole dish in the oven at 350 with one stick of butter( that’s the Paula Dean in me). Meanwhile mix one batch (1 1/2 cup of mix) of any flavor Great American Pancake Mix you like, Buttermilk, Gingerbread or Cinnamon would probably work best. Pour this mix into the melted butter in your pan/dish. Do not mix! Spoon the peaches over the batter, then gently pour the syrup all over the mix. Place in the oven for 40 to 45 minutes. I am trying it as I write this, using Cinnamon. I can’t wait! I’ll let you know how it comes out.
